Ingredients
  

8 large flour tortillas

6 large eggs

1 cup cooked and crumbled breakfast sausage or chorizo

1 cup shredded cheddar cheese (or your preferred cheese)

1 cup diced bell peppers (mixed colors)

1 cup diced onions

1 cup cooked black beans (drained and rinsed)

1/2 cup fresh spinach, chopped

1 teaspoon olive oil

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper to taste

Optional: Salsa, avocado, or hot sauce for serving

Instructions
 

Prep the Ingredients: Chop the bell peppers, onions, and spinach. If using uncooked sausage, cook it in a skillet over medium heat until browned and crumbly. Drain any excess fat and set aside.

    Cook the Veggies: In the same skillet, add olive oil. Sauté the diced onions and bell peppers until softened, about 5 minutes. Add the cooked sausage back to the skillet and stir in the garlic powder, ground cumin, salt, and pepper. Mix well and then remove from heat.

      Scramble the Eggs: In a separate bowl, whisk together the eggs and season with a pinch of salt and pepper. In a non-stick skillet, scramble the eggs over medium heat until slightly set but still creamy. Remove from heat.

        Assemble the Burritos: Lay out a tortilla on a clean surface. In the center, add a portion of the egg mixture, followed by a generous scoop of the sausage and veggie mix, a handful of black beans, and a sprinkle of cheese. Top with chopped spinach.

          Wrap It Up: Fold the sides of the tortilla inward and then roll it up from the bottom to the top, tucking in the fillings as you go. Ensure the burrito is tightly wrapped.

            Freezing Option: If you're making them for the freezer, wrap each burrito in foil or parchment paper. Place them in a freezer-safe bag or container. They can be stored in the freezer for up to 3 months.

              Reheating: To reheat, remove from the foil or parchment and wrap in a damp paper towel. Microwave on high for about 1-2 minutes, or until heated through. Alternatively, you can bake them at 350°F (175°C) for 25 minutes if you prefer a crispier texture.
