3 large ripe peaches, sliced

1/2 cup unsalted butter, divided

3/4 cup brown sugar, packed

1/4 cup bourbon

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.

    In a medium saucepan, melt 1/4 cup of butter over medium heat. Stir in the brown sugar and bourbon until the mixture is smooth and glossy. Remove it from the heat.

      Pour the bourbon mixture into the bottom of the prepared cake pan, spreading it evenly. Arrange the peach slices over the bourbon mixture in a decorative pattern.

        In a separate mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

          In another large bowl, cream the remaining 1/4 cup of butter with granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

            Gradually add the dry ingredients to the wet mixture alternately with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.

              Pour the batter over the arranged peaches in the pan, spreading it gently to cover the fruit.

                Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

                  Let the cake cool in the pan for about 10 minutes, then carefully invert it onto a serving plate.

                    Serve warm, optionally with whipped cream or vanilla ice cream to complement the flavors!
