3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon sugar (to balance flavors)

1/2 teaspoon red pepper flakes (optional for spice)

Prepare the Ingredients: Start by thoroughly washing the bok choy to remove any dirt or grit. Chop the bok choy into bite-sized pieces, separating the stems from the leaves. Slice the mushrooms and bell pepper, and mince the garlic and ginger.

    Heat the Oils: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the sesame oil for added flavor.

      Sauté Aromatics: Add the minced garlic and grated ginger to the skillet, sautéing for about 30 seconds until fragrant. Be careful not to burn them as they can turn bitter.

        Cook the Mushrooms: Add the sliced mushrooms to the skillet, stirring constantly for about 3-5 minutes until they are browned and tender. If you’re using a variety of mushrooms, mix them in for an even cook.

          Incorporate Vegetables: Toss in the sliced bell pepper and the bok choy stems first. Stir-fry for about 2-3 minutes, allowing the stems to slightly soften before adding the leaves.
