Boat Dip (Rotel Ranch Dip)

1 can (10 oz) Rotel Diced Tomatoes with Green Chiles, drained

1 packet (1 oz) Ranch Dressing Mix

1 can (15 oz) black beans, rinsed and drained

1 cup corn (canned or frozen)

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup sour cream

1/2 cup diced bell peppers (any color)

1/4 cup chopped fresh cilantro

1 teaspoon garlic powder

1 tablespoon lime juice

Salt and pepper to taste

Tortilla chips, for serving

Instructions
 

In a medium bowl, combine the softened cream cheese, sour cream, and ranch dressing mix. Mix well until smooth and creamy.

    Add in the drained Rotel tomatoes, black beans, corn, diced bell peppers, shredded cheddar cheese, garlic powder, lime juice, and chopped cilantro. Stir until all ingredients are well incorporated.

      Season the mixture with salt and pepper to taste. Adjust lime juice or seasoning according to your preference.

        Transfer the dip into a serving bowl. If time allows, refrigerate for at least 30 minutes to let the flavors meld together; however, it's delicious served immediately too!
