Instructions

Prepare the Filling:

    - In a mixing bowl, combine the heavy cream, powdered sugar, vanilla extract, and softened cream cheese.

      - Whip the mixture using a hand mixer on medium speed until soft peaks form. Set aside in the refrigerator.

        Prepare the Blueberry Filling:

          - In a small saucepan, combine the blueberries, sugar, cornstarch, and lemon juice.

            - Cook over medium heat, stirring gently until the blueberries begin to burst and the mixture thickens (about 5-7 minutes). Remove from heat and allow to cool slightly.

              Preheat the Oven:

                - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

                  Cut the Pastry Dough:

                    - Roll out the puff pastry sheet on a floured surface to about 1/4 inch thickness.

                      - Use a large round cookie cutter or a glass to cut out circles of dough. You should aim for about 4-6 circles.

                        - Using a smaller cutter, cut out a circle in the center of each larger circle to create a ring.

                          Assemble the Pastry Rings:

                            - Place the pastry rings on the prepared baking sheet.

                              - Brush the edges with the beaten egg to give them a golden color when baking.

                                - Spoon a bit of the blueberry mixture into the center of each pastry ring, careful not to overfill.

                                  Bake:

                                    - Bake in the preheated oven for 15-20 minutes or until the puff pastry is golden brown and puffed up.

                                      Cool and Fill:

                                        - Remove the pastry rings from the oven and allow them to cool completely on a wire rack.

                                          - Once cooled, carefully pipe or spoon the vanilla cream filling into the center of each ring.

                                            Serve:

                                              - Dust with powdered sugar and top with extra fresh blueberries. Serve immediately and enjoy the delightful combination of textures and flavors!
