Ingredients
  

For the Dough:

4 cups all-purpose flour

1/2 cup granulated sugar

1 packet (2 1/4 tsp) instant yeast

1 teaspoon salt

1/2 cup milk, warmed (110°F)

1/4 cup unsalted butter, melted

3 large eggs

1 teaspoon vanilla extract

For the Cream Cheese Filling:

8 oz cream cheese, at room temperature

1/4 cup powdered sugar

1 egg yolk

1 tsp vanilla extract

For the Blueberry Filling:

1 1/2 cups fresh or frozen blueberries

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch (for thickening)

For the Topping:

1 egg, beaten (for egg wash)

1 tablespoon coarse sugar (optional)

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine the flour, sugar, yeast, and salt. Mix well.

      - In a separate bowl, whisk together the milk, melted butter, eggs, and vanilla extract.

        - Gradually add the wet ingredients to the dry ingredients, mixing until a soft dough forms.

          - Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a clean cloth, and let rise in a warm place for 1-2 hours or until doubled in size.

            Make the Fillings:

              - For Cream Cheese Filling: In a bowl, beat the cream cheese, powdered sugar, egg yolk, and vanilla extract until smooth and creamy. Set aside.

                - For Blueberry Filling: In a saucepan over medium heat, combine the blueberries, sugar, lemon juice, and cornstarch. Cook until the mixture thickens and becomes syrupy, about 5-7 minutes. Remove from heat and let cool.

                  Assemble the Babka:

                    - Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

                      - Roll out the risen dough on a floured surface to a 15x10-inch rectangle.

                        - Spread the cream cheese filling evenly over the dough, followed by the blueberry filling.

                          - Starting from one long edge, tightly roll the dough into a log. Cut the log in half lengthwise, revealing the layers.

                            - Twist the two halves together, forming a twisted loaf. Place in the prepared loaf pan.

                              - Cover with a cloth again and allow to rise for another 30 minutes.

                                Bake the Babka:

                                  - Brush the top of the babka with the beaten egg for a shiny finish. Sprinkle with coarse sugar if desired.

                                    - Bake in the preheated oven for 30-35 minutes or until golden brown and cooked through.

                                      - Let the babka cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
