Blueberry Almond Coffee Cake – A Café-Style Dessert!

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

1/2 cup whole milk

2 large eggs

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon vanilla extract

1 1/2 cups fresh blueberries

1/2 cup sliced almonds (plus extra for topping)

1 teaspoon almond extract

1 tablespoon lemon zest (optional)

1 teaspoon cinnamon (for streusel topping)

1/4 cup brown sugar (for streusel topping)

2 tablespoons flour (for streusel topping)

2 tablespoons cold butter (for streusel topping)

Instructions
 

Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

    Make the Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-5 minutes.

      Add Wet Ingredients: Beat in the eggs, one at a time, ensuring each is well incorporated. Add the vanilla and almond extracts along with lemon zest, mixing until fully combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, alternating with whole milk. Mix until just combined, but do not overmix. Gently fold in the blueberries and sliced almonds.

          Prepare the Streusel Topping: In a small bowl, combine the brown sugar, flour, cinnamon, and cold butter. Use a fork or pastry cutter to mix until crumbly, resembling coarse sand.

            Assemble the Cake: Pour the batter into the prepared pan, spreading it evenly. Sprinkle the streusel topping generously over the batter, followed by additional sliced almonds for extra crunch.

              Bake: Place the cake in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

                Cool: Once baked, remove from the oven and let cool in the pan for 10 minutes. Then, turn out onto a wire rack to cool completely.
