2 ½ cups all-purpose flour

1 ½ cups granulated sugar

1 teaspoon baking soda

1 teaspoon cocoa powder

1 teaspoon salt

1 cup vegetable oil

1 cup buttermilk, room temperature

3 large eggs, room temperature

1 tablespoon vanilla extract

1 tablespoon blue food coloring

1 teaspoon white vinegar

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

2 teaspoons vanilla extract

2-3 tablespoons milk (to reach desired consistency)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, baking soda, cocoa powder, and salt. Set aside.

      Combine Wet Ingredients: In another bowl, whisk together the vegetable oil, buttermilk, eggs, vanilla extract, blue food coloring, and white vinegar until well combined.

        Combine Mixtures: Gradually add the wet mixture into the dry ingredients, mixing gently until just combined. Be careful not to overmix; a few lumps are okay!

          Pour into Pans: Divide the batter evenly between the two prepared cake pans. Smooth the tops with a spatula.

            Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Rotate the pans halfway through baking for even cooking.

              Cool the Cakes: Once baked, remove from the oven and allow the cakes to cool in the pans for 10 minutes. Then, transfer to a wire rack to cool completely.

                Prepare the Frosting: While the cakes are cooling, make the cream cheese frosting. In a large bowl, beat together the softened cream cheese and butter with an electric mixer until smooth and creamy. Gradually add the powdered sugar, mixing well after each addition. Stir in the vanilla extract. If the frosting is too thick, add milk 1 tablespoon at a time until you reach your desired consistency.

                  Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of cream cheese frosting on top. Place the second cake layer on top and frost the entire cake with the remaining cream cheese frosting.
