Blackened Fish Tacos with Chipotle-Lime Sauce

1 lb white fish fillets (like cod or tilapia)

2 tbsp olive oil

1 tbsp paprika

1 tsp cayenne pepper

1 tsp dried oregano

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

8 small corn tortillas

1 cup shredded red cabbage

1/2 cup diced fresh tomatoes

1 avocado, sliced

Fresh cilantro, for garnish

Chipotle-Lime Sauce:

1/2 cup sour cream

2 tbsp mayonnaise

1-2 chipotle peppers in adobo sauce, minced (adjust for spice level)

Zest and juice of 1 lime

1 tsp honey (optional)

Salt to taste

Prepare the Chipotle-Lime Sauce: In a bowl, mix together sour cream, mayonnaise, minced chipotle peppers, lime zest, lime juice, and honey (if using). Whisk until smooth. Taste and adjust seasoning with salt as desired. Refrigerate until ready to use.

    Spice the Fish: In a small bowl, combine paprika, cayenne pepper, dried oregano, garlic powder, onion powder, salt, and black pepper. Rub the spice mix evenly onto both sides of each fish fillet.

      Sear the Fish: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the seasoned fish fillets. Cook for 3-4 minutes on each side or until the fish is blackened and cooked through (should easily flake with a fork). Remove from heat and let rest for a minute.

        Warm the Tortillas: In the same skillet or a separate pan, lightly toast the corn tortillas for about 30 seconds on each side until they’re warm and flexible.

          Assemble Tacos: On each warmed tortilla, place a portion of the blackened fish. Top with shredded red cabbage, diced tomatoes, and avocado slices.

            Drizzle with Sauce: Generously drizzle the chipotle-lime sauce over the tacos and garnish with fresh cilantro.
