Blackberry Balsamic Glazed Pork

2 lbs pork tenderloin

1 cup fresh blackberries (plus extra for garnish)

½ cup balsamic vinegar

¼ cup honey

2 tbsp Dijon mustard

2 tbsp olive oil

3 cloves garlic, minced

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a medium saucepan, combine the balsamic vinegar, honey, Dijon mustard, minced garlic, and thyme. Bring the mixture to a simmer over medium heat, stirring occasionally, until it thickens slightly, about 5-7 minutes. Add the fresh blackberries and gently mash them into the sauce. Remove from heat and let it cool slightly.

      Season the Pork: Pat the pork tenderloin dry with paper towels. Rub the olive oil over the meat and season generously with salt and pepper.

        Sear the Pork: In an oven-safe skillet over medium-high heat, sear the pork tenderloin for about 3-4 minutes on each side until golden brown.

          Glaze the Pork: Once seared, pour half of the blackberry balsamic glaze over the pork in the skillet, reserving the other half for later. Make sure the glaze coats the meat well.

            Roast: Transfer the skillet to the preheated oven and roast the pork for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

              Rest the Meat: Remove the skillet from the oven and cover the pork tenderloin with aluminum foil. Let it rest for 5-10 minutes before slicing.

                Prepare to Serve: While the pork is resting, bring the reserved glaze to a simmer again, allowing it to thicken slightly if needed.

                  Plate and Garnish: Slice the pork tenderloin and arrange it on a serving platter. Drizzle the remaining blackberry balsamic glaze over the top and garnish with whole blackberries and a sprinkle of fresh thyme.
