Ingredients
  

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons freshly ground black pepper

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

4 cloves garlic, minced

1-inch piece ginger, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 spring onions (scallions), chopped for garnish

Salt to taste

Optional: Cooked jasmine rice or noodles for serving

Instructions
 

Marinate the Chicken: In a bowl, mix together the chicken pieces, black pepper, soy sauce, oyster sauce, and cornstarch. Allow it to marinate for at least 30 minutes to absorb the flavors.

    Prepare the Stir-fry: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.

      Cook the Chicken: Add the marinated chicken to the skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

        Add Vegetables: Toss in the sliced onion and bell peppers. Stir-fry the mixture for another 3-4 minutes or until the vegetables are slightly tender but still colorful and crisp.

          Season & Finish: Check for seasoning and add salt if necessary. Stir everything together and allow it to cook for an additional minute to combine the flavors.

            Serve: Remove from heat and transfer to a serving dish. Garnish with chopped spring onions. Serve hot over cooked jasmine rice or noodles for a complete meal.
