Ingredients

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

1 cup buttermilk

For the Sausage Gravy:

1 pound breakfast sausage (ground)

1/4 cup all-purpose flour

2 cups milk

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional)

For Assembly:

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 eggs (for topping, optional)

Fresh parsley or chives, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Make the Biscuits: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined (do not overmix).

Shape the Biscuits: Turn the dough onto a floured surface and gently knead it a few times to bring it together. Roll out to about ¾ inch thick. Use a round cutter (about 3 inches in diameter) to cut out biscuit rounds. You can also use a pizza cutter to cut into squares if desired. Place the biscuits on the prepared baking sheet and bake for 12-15 minutes or until golden brown.

Prepare the Sausage Gravy: While the biscuits are baking, cook the sausage in a large skillet over medium heat until browned and cooked through, breaking it apart with a spatula as it cooks. Drain excess fat if necessary. Sprinkle the flour over the sausage and stir to combine. Gradually add the milk, whisking constantly until thickened. Season with salt, pepper, garlic powder, onion powder, and red pepper flakes (if using). Let simmer on low heat for about 5-7 minutes.

Assemble the Pizza: Once the biscuits are baked, take them out and allow them to cool slightly. Reduce the oven temperature to 375°F (190°C). Using a rolling pin or your hands, flatten the biscuits into larger rounds or spread them out to form a pizza crust on a baking sheet.

Add the Toppings: Spread the sausage gravy evenly over the biscuit crust, leaving a small border around the edges. Sprinkle the mozzarella and Parmesan cheeses on top. If you’re adding eggs, crack them over the gravy, spacing them out.

Bake the Pizza: Return the breakfast pizza to the oven and bake for an additional 12-15 minutes, or until the cheese is melted and bubbly, and the eggs (if used) are set to your desired doneness.

Garnish and Serve: Remove from the oven and let it sit for a few minutes. Garnish with chopped parsley or chives. Slice and serve warm.
