BISCUITS AND GRAVY BOMBS!

A delightful twist on a classic dish.

Ingredients

For the Biscuit Dough:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk

For the Sausage Gravy:

1 pound breakfast sausage

1/4 cup all-purpose flour

2 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/4 teaspoon crushed red pepper flakes (optional)

For Assembly:

1 cup shredded cheddar cheese

Cooking spray or additional butter for greasing

Instructions

Make the Biscuit Dough: In a large mixing bowl, whisk together the flour, baking powder, salt, and baking soda. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Do not overmix. Turn the dough out onto a lightly floured surface and knead gently until smooth. Roll out to about 1/2 inch thick.

Prepare the Sausage Gravy: In a skillet over medium heat, cook the sausage until browned and cooked through. Remove excess grease, leaving about 2 tablespoons in the pan. Sprinkle the flour over the sausage and cook for 1-2 minutes, stirring constantly. Gradually whisk in the milk, breaking up any lumps. Cook until thickened, about 5-7 minutes. Add garlic powder, onion powder, salt, pepper, and red pepper flakes if using. Remove from heat and let cool slightly.

Assemble the Bombs: Preheat your oven to 375°F (190°C). Cut the biscuit dough into circles (about 3-4 inches in diameter). On the center of each circle, place a spoonful of sausage gravy and a tablespoon of shredded cheddar cheese. Carefully fold the edges of the dough over the filling, pinching to seal tightly.

Bake: Place the filled bombs seam-side down on a greased baking sheet. Brush the tops with melted butter for added golden color. Bake for 15-20 minutes or until golden brown.

Serve: Allow to cool for a few minutes before serving. Enjoy them warm, optionally drizzled with extra gravy or paired with your favorite breakfast sides!
