Ingredients
  

2 cups of crushed sweet biscuits (such as Digestive or Graham crackers)

1/2 cup unsalted butter, melted

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1/4 cup fresh lemon juice

1 cup mixed berries (strawberries, blueberries, raspberries) for topping

Optional: Fresh mint leaves for garnish

Instructions
 

Prepare the Biscuit Base:

    - In a medium bowl, combine the crushed biscuits and melted butter. Mix until well combined.

      - Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer.

        - Place the pan in the refrigerator to set while you prepare the filling.

          Make the Cream Cheese Filling:

            - In a large mixing bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy.

              - Add in the vanilla extract and lemon juice, and mix until fully incorporated.

                Whip the Cream:

                  - In another bowl, whip the heavy cream until stiff peaks form.

                    - Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the cream.

                      Assemble the Cake:

                        - Pour the cream cheese filling over the chilled biscuit base in the springform pan.

                          - Spread it evenly using a spatula. Cover the top with plastic wrap and refrigerate for at least 4 hours or until set (overnight for best results).

                            Serve:

                              - Once set, gently run a knife around the edges of the cake and remove the sides of the springform pan.
