Ingredients

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup Biscoff spread (plus extra for drizzling)

3 large eggs

1 cup whole milk

1 teaspoon vanilla extract

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup crushed Biscoff cookies (for decoration)

Instructions

Prepare the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

Mix the Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and Biscoff spread until fully combined.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.

Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the flour mixture, mixing until just combined. Be careful not to overmix!

Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cakes: Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, carefully turn them out onto wire racks to cool completely.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of Biscoff spread on top, followed by the second layer.

Frost the Cake: If desired, frost the cake with a simple buttercream frosting or whipped cream. Drizzle extra Biscoff spread on top and sprinkle the crushed Biscoff cookies to finish.

Serve and Enjoy: Slice the cake and serve it to your delighted guests. Enjoy each delicious bite!
