3 ripe bananas, sliced

1 cup Biscoff cookies, crushed (plus extra for topping)

2 cups whole milk

1/2 cup granulated sugar

1/3 cup cornstarch

1/4 teaspoon salt

1 teaspoon vanilla extract

4 large egg yolks

2 cups heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract (for whipped cream)

Make the Custard: In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually stir in the milk and cook over medium heat, stirring constantly until the mixture thickens and begins to bubble, about 5-7 minutes.

    Add Egg Yolks: In a small bowl, lightly beat the egg yolks. Slowly add a cup of the hot milk mixture to the yolks, whisking constantly to temper them. Then, slowly whisk this mixture back into the saucepan and cook for an additional 2-3 minutes until thickened. Remove from heat and stir in the vanilla extract.

      Layer the Pudding: In a trifle dish or individual cups, layer the crushed Biscoff cookies at the bottom, followed by a layer of sliced bananas, and then a layer of the vanilla custard. Repeat the layers until you fill the dish, finishing with a layer of custard on top.
