3 cups cooked birria meat (beef or goat), shredded

8 corn tortillas

2 cups birria broth (from cooking the meat)

1 cup Oaxaca cheese (or mozzarella), shredded

½ cup onion, finely chopped

½ cup fresh cilantro, chopped

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon chili powder

1 lime, cut into wedges

Salt and pepper to taste

Cooking oil for frying

Prepare the Birria Filling: In a large bowl, combine the shredded birria meat, cumin, garlic powder, paprika, chili powder, salt, and pepper. Mix until well combined.

    Warm the Tortillas: Heat a skillet over medium heat and lightly grease it with cooking oil. Warm each tortilla for about 30 seconds on each side until pliable. Keep them covered with a kitchen towel to stay warm.

      Assemble the Enchiladas: Take a warm tortilla, place a generous amount of the birria filling in the center, sprinkle with a little onion and cheese, then roll it tightly, placing it seam side down in a baking dish. Repeat with the remaining tortillas.

        Prepare the Broth Sauce: Pour the birria broth evenly over the rolled enchiladas in the baking dish, ensuring they are well covered.

          Bake: Preheat your oven to 350°F (175°C). Cover the dish with aluminum foil and bake for 20 minutes.

            Add Cheese Topping: After 20 minutes, remove the foil and sprinkle any remaining cheese on top. Bake for an additional 10 minutes, or until the cheese is bubbly and golden.
