Better Than Starbucks Egg Bites

A delightful twist on a classic dish.

Ingredients
  

6 large eggs

1/2 cup cottage cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/2 cup shredded cheddar cheese

1/4 cup diced bell peppers (red or green)

1/4 cup cooked and crumbled bacon or sausage (optional)

Fresh herbs (such as chives or parsley) for garnish

Instructions
 

Preheat your oven to 300°F (150°C).

    In a blender, combine the eggs, cottage cheese, salt, black pepper, and garlic powder. Blend until the mixture is smooth.

      Stir in the shredded cheddar cheese, diced bell peppers, and bacon or sausage (if using) until evenly distributed.

        Grease a muffin tin or silicone egg bite mold with cooking spray or oil.

          Pour the egg mixture into the greased muffin cups or molds, filling them about 2/3 full.

            Place the muffin tin or mold in a larger baking dish and fill the baking dish with hot water halfway up the sides of the muffin cups (this creates a gentle steam while baking).

              Bake in the preheated oven for 25-30 minutes, or until the egg bites are set and a toothpick inserted into the center comes out clean.

                Remove from the oven and let cool for a few minutes before gently removing the egg bites from the tin or mold.

                  Garnish with fresh herbs before serving.
