Ingredients
  

1 lb ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies, undrained

1 can (10 oz) enchilada sauce

2 cups tortilla chips, crushed

2 cups shredded cheddar cheese

1 cup sour cream

1 cup sliced jalapeños (fresh or pickled)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, cook the ground beef or turkey until browned, about 5-7 minutes. Drain excess fat if necessary.

      Add Aromatics: Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.

        Season it Up: Stir in the taco seasoning, black beans, corn, diced tomatoes, and enchilada sauce. Mix well and let it simmer for 5 minutes.

          Layer the Casserole: In a 9x13 inch baking dish, spread half of the crushed tortilla chips on the bottom. Pour half of the meat mixture on top, followed by half of the shredded cheese. Repeat the layers with the remaining chips, meat mixture, and cheese.

            Add Toppings: Spread the sour cream over the top layer of cheese and arrange sliced jalapeños on top.

              Bake: Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired. Slice and serve hot.
