Ingredients

20 large pasta shells

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus extra for topping

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Salt and pepper to taste

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: In a large pot of salted boiling water, cook the pasta shells according to package instructions until al dente. Drain and set aside to cool.

Prepare the Filling: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart as it cooks. Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes). Season with Italian seasoning, red pepper flakes, salt, and pepper. Remove from heat and let cool slightly.

Mix the Cheese Filling: In a mixing bowl, combine the ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan cheese, egg, and a pinch of salt and pepper. Stir until fully combined.

Combine: Add the cooked ground beef mixture to the cheese filling, mixing thoroughly to combine all ingredients.

Stuff the Shells: Carefully take each pasta shell and stuff it generously with the beef and cheese mixture, placing them open side up in a large baking dish.

Add Sauce: Pour half of the marinara sauce over the stuffed shells, making sure they’re evenly coated. Reserve the other half for later.

Top with Cheese: Sprinkle the remaining mozzarella cheese over the stuffed shells, and add any leftover marinara sauce on top.

Bake: Cover the baking dish with aluminum foil (to prevent sticking, spray the foil with a bit of cooking spray). Bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and lightly golden.

Serve and Garnish: Once baked, let the stuffed shells cool for a few minutes. Garnish with fresh basil leaves before serving for an added touch of flavor and presentation.
