1 cup all-purpose flour

½ cup unsalted butter, softened

½ cup granulated sugar

½ cup brown sugar, packed

1 teaspoon vanilla extract

1 teaspoon cream of tartar

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon salt

8 oz cream cheese, softened

1 cup white chocolate chips

1 cup finely crushed cinnamon graham crackers (for rolling)

Additional ground cinnamon and sugar for coating

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Toast the Flour: Spread the flour evenly on a baking sheet. Toast in the oven for 5-7 minutes, stirring halfway through, until it faintly smells nutty. Let it cool completely.

      Make the Cookie Base: In a large mixing bowl, combine the cooled toasted flour, softened butter, granulated sugar, brown sugar, and cream cheese. Beat with an electric mixer on medium speed until everything is well combined and creamy.

        Add Flavorings: Mix in the vanilla extract, cream of tartar, baking soda, ground cinnamon, and salt until fully incorporated.

          Chill the Dough: Cover the mixture with plastic wrap and refrigerate for at least 30 minutes, or until the dough is firm enough to shape into balls.

            Shape the Truffles: Once chilled, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the dough is shaped into truffles.
