Ingredients

1 lb ground beef (or turkey for a lighter option)

1 small onion, finely chopped

1 small bell pepper, diced (any color)

3 cloves garlic, minced

1 cup ketchup

2 tablespoons Worcestershire sauce

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

1 teaspoon chili powder

1 tablespoon mustard (yellow or Dijon)

Salt and pepper to taste

8 slices Texas toast (thick, buttery bread)

1 cup shredded cheddar cheese

Fresh parsley or cilantro, chopped (for garnish)

Instructions

Cook the Meat: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spatula. Drain any excess grease.

Sauté the Veggies: Add the chopped onion and bell pepper to the skillet. Sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

Make the Sloppy Sauce: In the skillet, add ketchup, Worcestershire sauce, brown sugar, apple cider vinegar, chili powder, and mustard. Season with salt and pepper to taste. Stir until well combined and let it simmer for about 5-10 minutes until the sauce thickens.

Prepare the Texas Toast: While the sloppy mixture is simmering, preheat the oven to 375°F (190°C). Lay the Texas toast slices on a baking sheet and bake for 5-7 minutes on each side until golden and crispy.

Assemble: Take the Texas toast out of the oven. Spoon a generous portion of the sloppy joe mixture onto half of the slices. Top each with shredded cheddar cheese. Place the other slices of toast on top to create a sandwich.

Melt the Cheese: Return the assembled sandwiches to the oven and bake for an additional 3-5 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven, sprinkle with chopped parsley or cilantro, slice in half if desired, and serve immediately.
