4 large ripe peaches, peeled and diced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon cinnamon

1 tablespoon cornstarch

1 teaspoon vanilla extract

4 waffle cones

1 cup granola (your choice of flavor)

1 cup whipped cream or vanilla ice cream

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium bowl, combine the diced peaches, granulated sugar, lemon juice, cinnamon, and cornstarch. Mix well to coat the peaches and let it sit for about 10 minutes for juices to meld.

    In a saucepan over medium heat, add the peach mixture and cook for about 5-7 minutes until the peaches start to soften and release their juices. Remove from heat and stir in the vanilla extract. Allow the mixture to cool slightly.

      While the peaches are cooling, prepare the waffle cones. If desired, you can lightly toast the cones in an oven at 350°F (175°C) for about 5 minutes to make them crunchy.

        Once the peach filling has cooled, carefully fill each waffle cone with a generous amount of the peach cobbler filling.

          After filling the cones, top each one with a scoop of whipped cream or a scoop of vanilla ice cream.
