Ingredients
  

4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

1/2 cup milk (whole or skim)

4 slices of bacon, cooked until crispy and crumbled (optional)

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and black pepper to taste

1 cup shredded sharp cheddar cheese

Fresh chives or green onions for garnish

Instructions
 

In a large pot, place the diced potatoes, chopped onion, minced garlic, and broth. Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to medium-low and let it simmer until the potatoes are tender, about 15-20 minutes.

      Using an immersion blender, blend the soup until creamy. (If you don’t have an immersion blender, you can carefully transfer half of the soup to a blender, puree, and return it to the pot.)

        Stir in the heavy cream, milk, thyme, and smoked paprika. Allow to simmer for an additional 5-10 minutes.

          Season with salt and black pepper to taste. If desired, stir in crumbled bacon for an added crunch.

            Just before serving, mix in the shredded cheddar cheese until melted.

              Ladle the soup into bowls and garnish with fresh chives or green onions.
