1 cup rolled oats

2 tablespoons honey

1 ½ teaspoons salt

1 packet (2 ¼ teaspoons) active dry yeast

1 ½ cups warm water (about 110°F/43°C)

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon ground cinnamon (optional)

½ cup sunflower seeds or walnuts (optional for added texture)

Activate the Yeast: In a large mixing bowl, combine the warm water and honey. Sprinkle the active dry yeast over the top and let it sit for about 5-7 minutes, or until frothy. This step ensures the yeast is alive and ready to work.

    Combine Dry Ingredients: In another bowl, mix together the whole wheat flour, rolled oats, salt, and cinnamon (if using). For a nutty crunch, fold in the sunflower seeds or walnuts at this stage.

      Mix the Dough: Once the yeast mixture is frothy, add the olive oil and apple cider vinegar to it. Slowly add the dry mixture to the wet ingredients, stirring until the dough starts to come together.

        Knead the Dough: Transfer the dough onto a floured surface. Knead the dough for about 8-10 minutes, until it becomes smooth and elastic. If the dough is sticky, add a little more flour as needed, but be careful not to add too much.

          First Rise: Shape the kneaded dough into a ball and place it in a lightly greased bowl. Cover it with a clean kitchen towel or plastic wrap. Let it rise in a warm area until it doubles in size, about 1 hour.
