Ingredients
  

3 to 4 pounds pork roast (shoulder or loin)

Salt and pepper (to taste)

2 tablespoons olive oil

1 large onion, sliced

4 cloves garlic, minced

1 cup balsamic vinegar

1/2 cup honey

2 tablespoons Dijon mustard

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

1 teaspoon dried rosemary

1/2 teaspoon red pepper flakes (optional, for a little heat)

2 cups low-sodium chicken broth

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Pork: Pat the pork roast dry with paper towels. Season generously with salt and pepper on all sides.

    Sear the Meat: In a large skillet over medium-high heat, heat the olive oil. Once hot, add the pork roast and sear it for about 4-5 minutes on each side until browned. Remove the roast from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the sliced onions and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Prepare the Sauce: In a mixing bowl, whisk together the balsamic vinegar, honey, Dijon mustard, Worcestershire sauce, dried thyme, rosemary, and red pepper flakes (if using).

          Combine in Slow Cooker: Place the seared pork roast into your slow cooker. Pour the sautéed onions and garlic on top, followed by the balsamic sauce mixture. Finally, pour the chicken broth into the slow cooker around the roast.

            Cook: Cover the slow cooker and set it on low for 8 hours or high for 4-5 hours, until the pork is tender and easily pulls apart with a fork.

              Shred and Serve: Once cooked, carefully remove the pork roast from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker to soak up the juices for about 10 more minutes.

                Garnish and Enjoy: Serve the balsamic pork roast warm, garnished with fresh parsley. It pairs perfectly with mashed potatoes, rice, or a fresh salad!
