BEEF & TOMATO MACARONI SOUP

A delightful twist on a classic dish.

Ingredients
  

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups beef broth

1 cup water

1 cup elbow macaroni

1 tsp Italian seasoning

1 tsp salt (adjust to taste)

½ tsp black pepper

1 cup diced carrots

1 cup frozen peas

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent (about 3-5 minutes).

    Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 6-8 minutes. Drain excess fat if necessary.

      Stir in the crushed tomatoes, beef broth, water, Italian seasoning, salt, black pepper, and diced carrots. Bring to a boil.

        Once boiling, reduce the heat to a simmer and add the elbow macaroni. Cook according to package instructions (about 7-10 minutes), stirring occasionally.

          When the macaroni is nearing doneness, add the frozen peas and continue to simmer for an additional 2-3 minutes, or until all ingredients are heated through and the macaroni is tender.

            Taste and adjust the seasoning if needed. Remove from heat.

              Ladle the soup into bowls and garnish with chopped fresh parsley before serving.
