1 lb ground beef

1 cup shredded cheddar cheese

1 cup refried beans

½ cup onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

Salt and pepper, to taste

4 large flour tortillas

Vegetable oil, for frying

Fresh cilantro, for garnish (optional)

Salsa, for serving (optional)

Cook the Beef: In a large skillet over medium heat, add the ground beefand cook until browned, breaking it apart with a spatula. Drain excess grease if necessary.

    Sauté Aromatics: Add the chopped onion and minced garlic to the skillet. Cook for about 3-4 minutes until the onion is soft.

      Season: Stir in the cumin, chili powder, salt, and pepper. Cook for an additional 1-2 minutes to let the flavors blend.

        Combine Filling: Remove skillet from heat and stir in the refried beans and shredded cheddar cheese until well combined. Let the mixture cool slightly.

          Assemble Chimichangas: Place a tortilla on a flat surface. Scoop about ¼ of the beef mixture onto the center of the tortilla. Fold the sides over the filling and roll it up tightly, burrito-style. Secure with toothpicks if needed. Repeat with remaining tortillas.

            Fry the Chimichangas: In a deep skillet or frying pan, heat about 1 inch of vegetable oil to 350°F (175°C). Carefully place the chimichangas seam-side down in the hot oil. Fry for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
