2 cups cooked chicken, shredded

1/2 cup BBQ sauce (your favorite brand)

4 slices of sourdough or Texas toast bread

1 1/2 cups shredded cheddar cheese

1/2 cup shredded mozzarella cheese

2 tablespoons butter, softened

1/4 cup diced red onion (optional)

Fresh cilantro or parsley, chopped (for garnish)

Salt and pepper to taste

Prepare Chicken: In a medium bowl, mix the shredded chicken with the BBQ sauce. Adjust seasoning with salt and pepper to taste. If desired, add the diced red onion for an extra crunch.

    Assemble Sandwiches: Lay out the four slices of bread on a clean surface. On the first slice, spread a generous layer of the BBQ chicken mixture, then sprinkle 1/4 cup cheddar cheese followed by 2 tablespoons of mozzarella cheese. Top with a second slice of bread.

      Butter the Bread: Spread a thin layer of softened butter on the top slice of the sandwich.

        Grill the Sandwiches: Preheat a skillet over medium heat. Place the sandwich butter-side down on the skillet. Grill for about 3-4 minutes until the bottom is golden brown. While cooking, butter the top slice. Flip the sandwich, and grill the other side for another 3-4 minutes until the cheese is melted and the bread is crispy.
