1 pound salmon fillet, skin removed and cut into bite-sized pieces

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

Vegetable oil, for frying

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

Green onions, chopped, for garnish

Sesame seeds, for garnish

Instructions
 

Prepare the Salmon: Pat the salmon pieces dry with a paper towel. This will help the breading stick better. Season with salt and pepper.

    Set Up Breading Station: In three separate bowls, place the flour in the first bowl, beat the eggs in the second bowl, and panko breadcrumbs mixed with garlic powder and paprika in the third bowl.

      Bread the Salmon: Take a piece of salmon, coat it in flour, then dip it into the beaten eggs, and finally roll it in the panko mixture. Ensure all sides are well-coated.

        Heat Oil: In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat. To test if the oil is hot enough, drop a small piece of breading in; it should sizzle immediately.

          Fry the Salmon Bites: Carefully add the breaded salmon pieces to the hot oil, making sure not to overcrowd the pan. Fry until they are golden brown and cooked through, approximately 3-4 minutes on each side. Transfer them to a paper towel-lined plate to drain excess oil.

            Make the Bang Bang Sauce: In a small bowl, mix together mayonnaise, sweet chili sauce, and sriracha until well combined. Adjust the sriracha to your desired level of spiciness.

              Serve: Place the crispy salmon bites on a serving platter. Drizzle or serve with the bang bang sauce on the side. Garnish with chopped green onions and sesame seeds.
