For the Chicken:

1 lb (450g) boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 tsp paprika

1 tsp garlic powder

Salt and pepper, to taste

Oil, for frying

For the Bang Bang Sauce:

½ cup mayonnaise

¼ cup sweet chili sauce

1 tbsp Sriracha (adjust for spice level)

1 tsp honey (optional)

1 tsp lime juice

Chopped green onions, for garnish

Instructions
 

Marinate the Chicken: In a medium bowl, soak the chicken breasts in buttermilk for at least 1-2 hours (or overnight) to tenderize and flavor the meat.

    Prepare the Coating: In another bowl, combine flour, paprika, garlic powder, salt, and pepper. Mix well to ensure even seasoning.

      Preheat Oil: In a deep saucepan or frying pan, heat oil over medium-high heat (about 350°F/175°C).

        Coat the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dip each piece into the flour mixture, ensuring it is fully coated. Shake off any excess flour.

          Fry the Chicken: Carefully place the coated chicken in the hot oil. Fry for about 6-8 minutes per side or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Cook in batches if necessary to avoid overcrowding the pan.

            Make the Bang Bang Sauce: In a small mixing bowl, combine mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice. Mix thoroughly until smooth and well blended.

              Serve: Remove the chicken from the oil and place on paper towels to drain any excess oil. Slice the chicken into strips and toss in the Bang Bang sauce until evenly coated.

                Garnish: Transfer the coated chicken to a serving dish and sprinkle with chopped green onions for a burst of color and flavor.
