Ingredients
  

6 cups of day-old brioche bread, cubed

3 ripe bananas, sliced

4 large eggs

2 cups half-and-half

1 cup brown sugar, packed

1 tablespoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup dark rum (optional)

1/4 cup unsalted butter

1/2 cup pecans, chopped (optional)

Vanilla ice cream for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    Prepare the Bread: In a large mixing bowl, combine the cubed brioche bread and sliced bananas. Gently toss them together and place the mixture in the greased baking dish.

      Whisk the Custard Mixture: In a separate bowl, whisk together the eggs, half-and-half, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined and the sugar is dissolved.

        Combine Ingredients: Pour the custard mixture evenly over the bread and banana mixture in the baking dish, ensuring all the bread is soaked. Press down any bread that floats to ensure it's immersed in the liquid.

          Add Nuts and Rum: If using, sprinkle the chopped pecans evenly over the top. Drizzle the dark rum over the bread pudding mixture (this adds a wonderful flavor but is optional).

            Make the Topping: In a small saucepan, melt the butter over medium heat. Allow it to brown slightly, then pour it over the top of the bread pudding for a rich, caramel-like finish.

              Bake the Pudding: Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes. Then, remove the foil and bake for an additional 15-20 minutes until the top is golden brown and the custard is set.

                Cool and Serve: Once baked, let the bread pudding cool for about 10-15 minutes. Serve warm with a scoop of vanilla ice cream on top, and if desired, drizzle with additional rum sauce or caramel for extra indulgence.
