Ingredients

1 cup unsalted butter, melted

2 cups granulated sugar

1 cup packed brown sugar

4 large eggs

2 teaspoons vanilla extract

1 ½ cups all-purpose flour

½ cup unsweetened cocoa powder

1 teaspoon baking powder

½ teaspoon salt

1 cup crushed banana chips (plus extra for topping)

1 cup banana pudding (store-bought or homemade)

½ cup whipped cream (for topping)

Sliced fresh bananas (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal later.

Mix Wet Ingredients: In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix well until creamy. Then, add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt until combined.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix. Fold in the crushed banana chips until evenly distributed.

Pour into Pan: Pour half of the brownie batter into the prepared baking pan, spreading it out evenly. Add the banana pudding over the brownie layer, smoothing it gently with a spatula. Finally, spoon the remaining brownie batter over the pudding layer, carefully spreading it to cover.

Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Allow to cool in the pan for at least 15 minutes before transferring to a wire rack to cool completely.

Prepare Whipped Cream: While the brownies are cooling, whip together the whipped cream until soft peaks form.

Serve: Once the brownies are completely cooled, cut them into squares. Top each square with a dollop of whipped cream, a few slices of fresh banana, and garnish with extra crushed banana chips for a crunchy finish.
