2 ripe bananas, mashed

1 cup rolled oats

1/2 cup all-purpose flour (or whole wheat flour for a healthier option)

1/4 cup brown sugar (or maple syrup)

1/4 cup honey or maple syrup

1/2 cup milk (dairy or non-dairy)

1/4 cup vegetable oil or melted coconut oil

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 teaspoon vanilla extract

Optional: 1/2 cup walnuts or chocolate chips for added texture and flavor

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, baking soda, cinnamon, and salt.

      Combine Wet Ingredients: In another bowl, mix the mashed bananas, milk, vegetable oil, honey (or maple syrup), and vanilla extract until well combined.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix. If desired, fold in walnuts or chocolate chips.

          Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 of the way full.

            Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

              Cool & Serve: Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or store in an airtight container.
