For the Cheesecake:

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1 cup granulated sugar

24 oz cream cheese, softened

1 cup sour cream

4 large eggs

1 tsp vanilla extract

1/2 tsp banana extract

1 large ripe banana, mashed

For the Bavarian Cream:

1 cup heavy cream

1/2 cup whole milk

1/2 cup granulated sugar

1 envelope (2 1/4 tsp) unflavored gelatin

2 large egg yolks

1 tsp vanilla extract

1/2 tsp banana extract

For Topping:

2 large ripe bananas, sliced

Whipped cream

Crushed graham crackers

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine the graham cracker crumbs and melted butter. Mix well until all the crumbs are moistened.

        - Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the cream cheese and sugar together using an electric mixer until smooth and creamy.

              - Add the sour cream, mashed banana, vanilla, and banana extract; mix well.

                - Add the eggs, one at a time, beating well after each addition until fully incorporated.

                  - Pour the cheesecake filling over the cooled crust. Bake for about 60 minutes or until the center is set but still slightly jiggly.

                    - Turn off the oven, crack the door, and allow the cheesecake to cool inside for 1 hour to prevent cracking. Remove from the oven and refrigerate for at least 4 hours or overnight.

                      Prepare the Bavarian Cream:

                        - In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water and let it bloom while you prepare the rest.

                          - In a saucepan, combine the heavy cream, milk, and sugar over medium heat until it begins to simmer. Remove from heat.

                            - Whisk in the bloomed gelatin until completely dissolved. In a separate bowl, whisk the egg yolks along with the vanilla and banana extracts.

                              - Gradually add the warm cream mixture to the egg yolks, whisking constantly to prevent curdling.

                                - Pour the mixture back into the saucepan and cook it over low heat, stirring constantly until it thickens (about 5 minutes). Do not let it boil.

                                  - Remove from heat and refrigerate until thickened and cool but still pourable (about 30 minutes).

                                    Assemble the Cheesecake:

                                      - Once the cheesecake has set and the Bavarian cream is ready, carefully pour the Bavarian cream over the cheesecake layer.

                                        - Gently top with banana slices, and if desired, add a dollop of whipped cream and sprinkle crushed graham crackers on top for added texture.

                                          Chill and Serve:

                                            - Place the entire cheesecake back in the refrigerator for another 2-3 hours to set everything together.
