2 ripe bananas, mashed

1 cup all-purpose flour

1 cup almond milk (or any milk of choice)

2 large eggs

2 tablespoons melted coconut oil (or butter)

¼ cup brown sugar (or maple syrup)

2 teaspoons baking powder

1 teaspoon cinnamon

½ teaspoon vanilla extract

¼ teaspoon salt

½ cup chopped walnuts or pecans (optional)

Maple syrup and sliced bananas for serving

Instructions
 

Preheat your waffle maker according to the manufacturer's instructions.

    In a mixing bowl, mash the ripe bananas until smooth.

      Add the almond milk, eggs, melted coconut oil, brown sugar, and vanilla extract to the bowl, and whisk until well combined.

        In a separate bowl, mix the flour, baking powder, cinnamon, and salt.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix; a few lumps are okay!

            If using, gently fold in the chopped nuts.

              Lightly grease the waffle maker with cooking spray or a brush of oil.

                Pour the batter onto the preheated waffle maker (about ½ cup for each waffle or as per your maker's guidelines). Close the lid and cook until the waffles are golden brown and crisp (usually about 3-5 minutes, but this can vary).

                  Carefully remove the waffles and keep them warm in the oven set to low heat while you repeat with the remaining batter.
