Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

Filling:

16 oz cream cheese, softened

¾ cup granulated sugar

½ cup sour cream

3 large eggs

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

½ cup chopped walnuts (toasted)

½ cup chopped pistachios (toasted)

½ cup honey

Topping:

½ cup honey for drizzling

¼ cup chopped nuts for garnish (mixed walnuts and pistachios)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and ground cinnamon. Mix until fully incorporated.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let it cool.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy, about 3 minutes.

              - Gradually add the granulated sugar and mix well. Add the sour cream, mixing until combined.

                - Add the eggs one at a time, ensuring each is fully incorporated before adding the next.

                  - Mix in vanilla extract, ground cinnamon, chopped walnuts, chopped pistachios, and honey. Blend until smooth.

                    Assemble the Cheesecake:

                      - Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

                        - Bake for 50-60 minutes or until the center is set but still slightly jiggly. The cheesecake will firm up as it cools.

                          Cool the Cheesecake:

                            - Once baked, turn off the oven, crack the door open, and allow the cheesecake to cool in the oven for about 1 hour to minimize cracking.

                              - Remove from the oven and let it cool at room temperature. Chill in the refrigerator for at least 4 hours (preferably overnight) before serving.

                                Prepare the Topping:

                                  - Just before serving, drizzle the top of the cheesecake generously with honey and sprinkle with the remaining chopped nuts.

                                    Serve:

                                      - Carefully remove the sides of the springform pan, slice the cheesecake into wedges, and serve chilled.
