Baked Parmesan Zucchini

2 medium zucchinis, sliced into 1/4-inch rounds

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

2 tablespoons chopped fresh parsley (for garnish)

Olive oil spray or a drizzle of olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash the zucchinis and slice them into 1/4-inch thick rounds. Make sure to try and keep them uniform for even cooking.

      Set Up Breading Station: In one shallow bowl, whisk the eggs until well beaten. In another shallow bowl, combine the grated Parmesan, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper.

        Coat the Zucchini: Dip each zucchini slice into the beaten eggs, allowing any excess to drip off, then coat it in the Parmesan-breadcrumb mixture, pressing gently to adhere. Place the coated slices on the prepared baking sheet.
