4 medium russet potatoes

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 teaspoon sea salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Optional: Extra Parmesan for topping

Preheat your oven to 425°F (220°C).

    Wash and scrub the potatoes thoroughly. Cut each potato in half lengthwise, then cut each half into wedges (about 6-8 wedges per potato).

      In a large bowl, combine the olive oil, minced garlic, oregano, smoked paprika, sea salt, and black pepper. Mix well.

        Add the potato wedges to the bowl and toss them in the olive oil mixture until evenly coated.

          Lay the wedges out in a single layer on a baking sheet lined with parchment paper, ensuring they’re not overcrowded.

            Bake in the preheated oven for 25-30 minutes or until golden brown and crispy. Flip the wedges halfway through for even cooking.

              Remove the baking sheet from the oven, then sprinkle the grated Parmesan cheese evenly over the hot potato wedges.

                Return to the oven for an additional 3-5 minutes, allowing the cheese to melt and form a light golden crust.

                  Once done, remove from the oven and let cool for a minute. Garnish with fresh parsley and extra Parmesan if desired.

                    Serve warm with your favorite dipping sauce.
