Ingredients
  

4 large russet potatoes, scrubbed clean

1/4 cup olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon salt

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Optional: 1/4 teaspoon red pepper flakes (for added heat)

Instructions
 

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    Cut each potato in half lengthwise, then into wedges (about 8 wedges per potato).

      In a large bowl, combine the olive oil, minced garlic, oregano, paprika, black pepper, salt, and optional red pepper flakes. Mix well.

        Add the potato wedges to the bowl and toss until they are evenly coated with the garlic and oil mixture.

          Spread the potato wedges in a single layer on the prepared baking sheet, ensuring they are not overcrowded.

            Bake in the preheated oven for 25 minutes.

              Remove from the oven and sprinkle the grated Parmesan cheese over the top of the wedges.

                Return to the oven and bake for an additional 10-15 minutes, or until the wedges are golden brown and crispy.

                  Once done, remove from the oven and let them cool slightly. Garnish with chopped fresh parsley before serving.
