Baked Feta Potatoes

4 medium-sized russet potatoes

200g feta cheese, crumbled

1/4 cup olive oil

1 teaspoon dried oregano

2 cloves garlic, minced

1 teaspoon fresh lemon juice

1/4 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Cherry tomatoes for roasting alongside

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Potatoes: Scrub the russet potatoes well and prick them multiple times with a fork. This allows steam to escape during baking. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender when pierced with a fork.

      Prepare Feta Mixture: While the potatoes are baking, in a medium bowl, combine crumbled feta cheese, olive oil, minced garlic, oregano, lemon juice, red pepper flakes, salt, and pepper. Mix well until it forms a cohesive mixture.

        Roast Optional Tomatoes: If using cherry tomatoes, toss them with a bit of olive oil, salt, and pepper in a separate baking dish. Place in the oven during the last 20-25 minutes of the potatoes baking, until they burst and caramelize.

          Assemble the Potatoes: Once the potatoes are done, carefully remove them from the oven. Let them cool for a few minutes, then slice them open lengthwise. Use a fork to fluff the insides gently.

            Add Feta Mixture: Spoon the feta mixture generously into each potato, pressing down slightly to fit as much as possible. If you roasted cherry tomatoes, scatter them on top.

              Final Bake: Return the stuffed potatoes to the oven for an additional 10-15 minutes, or until the feta is golden and slightly bubbly.

                Garnish and Serve: Remove from the oven, garnish with freshly chopped parsley, and serve warm. Enjoy your delectable baked feta potatoes!
