Ingredients

200g (7 oz) feta cheese

300g (10.5 oz) cherry tomatoes

3-4 cloves garlic, minced

300g (10.5 oz) short pasta (e.g., penne or fusilli)

1/2 cup olive oil

1 tsp red pepper flakes (optional)

1 tsp dried oregano

Fresh basil leaves, for garnish

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Instructions

Preheat the oven to 400°F (200°C).

In a baking dish, place the block of feta cheese in the center. Surround it with cherry tomatoes and minced garlic.

Drizzle the olive oil over the feta and tomatoes, ensuring everything is well coated. Sprinkle with red pepper flakes, dried oregano, salt, and pepper.

Bake in the preheated oven for 25-30 minutes, or until the tomatoes are blistered and the feta is softened and slightly golden.

While the feta and tomatoes are baking, cook the pasta according to package instructions in salted water until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.

Once the feta is baked, remove the dish from the oven. Using a fork, crush the feta and mix it with the tomatoes until well combined.

Add the cooked pasta to the baking dish, tossing everything together. If the mixture seems too thick, gradually add in the reserved pasta water until the desired creaminess is achieved.

Serve immediately, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese.
