200g (7 oz) block of feta cheese

4 large eggs

1 cup cherry tomatoes, halved

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust based on spice preference)

Salt and pepper to taste

Fresh basil or parsley for garnish

Crusty bread or toast for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a medium-sized baking dish, drizzle 1 tablespoon of olive oil. Place the block of feta cheese in the center.

      Add the Vegetables: Scatter the halved cherry tomatoes around the feta. Pour the remaining tablespoon of olive oil over the tomatoes and add the minced garlic. Season with dried oregano, red pepper flakes, salt, and pepper.

        Bake: Place the baking dish in the preheated oven and bake for about 20 minutes, or until the feta is softened and the tomatoes are blistering.

          Crack the Eggs: Remove the baking dish from the oven. Carefully crack the eggs directly over the baked feta and tomatoes, ensuring not to break the yolks.

            Return to Oven: Put the dish back in the oven and bake for an additional 8-10 minutes, or until the egg whites are set but the yolks are still runny, or to your desired doneness.

              Garnish: Once done, remove from the oven and let it cool for a minute before garnishing with fresh basil or parsley.

                Serve: Serve hot, with crusty bread or toast for dipping into the luscious, cheesy, and eggy goodness!
