4 large eggs

1/2 cup grated cheese (cheddar or mozzarella works well)

1/4 cup chopped fresh spinach

1/4 cup diced bell peppers (red or green)

2 tablespoons chopped green onions

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil or melted butter

Fresh herbs for garnish (optional, like parsley or chives)

Preheat your oven to 375°F (190°C) and grease a 9-inch round baking dish or any oven-safe skillet with olive oil or melted butter.

    In a large mixing bowl, whisk together the cottage cheese and eggs until well combined and slightly frothy.

      Stir in the grated cheese, chopped spinach, diced bell peppers, green onions, garlic powder, onion powder, salt, and pepper. Mix until everything is evenly distributed.
