Ingredients

1 cup cottage cheese

4 large eggs

1/2 cup spinach, chopped

1/4 cup cherry tomatoes, halved

1/4 cup bell pepper, diced

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon salt

1/2 teaspoon mixed herbs (e.g., oregano and basil)

1/4 cup shredded cheese (cheddar or mozzarella)

Fresh herbs for garnish (optional)

Instructions

Preheat your oven to 375°F (190°C).

In a mixing bowl, combine the cottage cheese, garlic powder, onion powder, salt, black pepper, and mixed herbs. Stir until well combined.

Grease a baking dish (approximately 8x8 inches) with a bit of oil or butter to prevent sticking.

Spread the cottage cheese mixture evenly across the bottom of the prepared baking dish.

Create small wells in the mixture with your spoon, then gently crack the eggs into each well, taking care not to break the yolks.

Distribute the chopped spinach, bell pepper, and cherry tomatoes evenly over the eggs.

Sprinkle the shredded cheese over the entire dish, ensuring it covers the veggies and eggs.

Bake in the preheated oven for 25-30 minutes or until the egg whites are set, but the yolks are still slightly runny (or longer if you prefer firmer yolks).

Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh herbs if desired.

Serve warm, and enjoy your delicious Baked Cottage Cheese Eggs!
