12 oz egg noodles

2 cups cooked chicken, shredded

1 cup frozen peas and carrots

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup chicken broth

1 tsp garlic powder

1 tsp onion powder

1 tsp dried thyme

1 cup shredded cheddar cheese

Salt and pepper to taste

1 cup panko breadcrumbs

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C).

    Cook the noodles: In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

      Combine ingredients: In a large mixing bowl, combine the shredded chicken, frozen peas and carrots, cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, dried thyme, and salt and pepper. Mix until well combined.

        Add noodles: Gently fold the cooked noodles into the chicken mixture until everything is evenly coated.

          Prepare casserole dish: Grease a 9x13 inch baking dish with cooking spray or olive oil. Pour the noodle mixture into the dish and spread it out evenly.

            Add cheese: Sprinkle the shredded cheddar cheese over the top of the casserole.

              Prepare topping: In a small bowl, combine the panko breadcrumbs with olive oil, mixing until the breadcrumbs are evenly coated. Sprinkle the breadcrumb mixture over the cheese layer in the casserole.

                Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the casserole is bubbly and the top is golden brown.

                  Garnish and serve: Once done, remove from the oven and let it sit for a few minutes. Garnish with fresh chopped parsley before serving.
