2 cups sliced fresh mushrooms (button or cremini)

1 medium onion, diced

3 cloves garlic, minced

1 cup cooked quinoa (or rice)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup heavy cream

1 tablespoon olive oil

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup chopped fresh spinach (optional)

1/2 cup breadcrumbs (for topping)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C).

    Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 4-5 minutes. Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are soft and most of their moisture has evaporated (about 5-7 minutes).

      Combine the ingredients: In a large mixing bowl, combine the cooked quinoa, sautéed vegetables, heavy cream, mozzarella cheese, Parmesan cheese, thyme, salt, pepper, and chopped spinach (if using). Mix well until all ingredients are evenly combined.

        Prepare the casserole: Transfer the mixture into a greased 9x13-inch casserole dish, spreading it evenly.

          Top with breadcrumbs: Evenly sprinkle the breadcrumbs over the top of the casserole to create a crunchy topping.

            Bake: Place the casserole in the preheated Oven and bake for 25-30 minutes or until the cheese is bubbly and golden and the breadcrumbs are crispy.

              Serve: Allow to cool slightly before serving. Scoop out portions and enjoy!
