2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon cinnamon

¼ teaspoon nutmeg

½ teaspoon salt

1 cup unsweetened applesauce

½ cup brown sugar, packed

¼ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups diced apples (about 2 medium apples, peeled and cored)

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

½ teaspoon vanilla extract (for glaze)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt. Whisk until well combined.

      Mix Wet Ingredients: In a separate bowl, whisk together the applesauce, brown sugar, granulated sugar, eggs, and 1 teaspoon of vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix. Gently fold in the diced apples until evenly distributed.
