2 medium-sized apples (such as Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1/2 cup buttermilk (or milk with 1 teaspoon vinegar for a substitute)

1 teaspoon pure vanilla extract

2 tablespoons melted butter

1/4 cup powdered sugar (for glaze)

1-2 tablespoons milk (for glaze)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Apple Mixture: In a bowl, combine the diced apples with a sprinkle of cinnamon and set aside.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

        Mix Wet Ingredients: In another bowl, whisk together the granulated sugar, brown sugar, egg, buttermilk, vanilla extract, and melted butter until smooth.

          Combine Ingredients: Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix. Carefully fold in the diced apples.

            Shape Fritters: Using a large spoon or a cookie scoop, drop dollops of the batter onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake: Bake in the preheated oven for 15-20 minutes or until the fritters are golden brown and a toothpick inserted in the center comes out clean.
