These mini sandwiches are perfect for busy mornings, allowing you to pack in a variety of ingredients without compromising on taste.

Bagel Breakfast Sliders

A delightful twist on a classic dish.

Ingredients
  

4 mini bagels (everything or plain)

4 large eggs

4 slices of cheddar cheese

4 strips of cooked bacon or turkey bacon

1 ripe avocado, sliced

1/2 cup baby spinach

Salt and pepper to taste

1 tablespoon olive oil or butter

Optional: hot sauce for serving

Instructions
 

Prepare the Bagels: Slice the mini bagels in half and lightly toast them until golden brown. This adds a nice crunch and helps prevent sogginess.

    Cook the Eggs: In a skillet, heat olive oil or butter over medium heat. Crack the eggs into the skillet and season with salt and pepper. Cook to your desired preference, sunny side up or over easy, until the whites are set but the yolks are still runny (about 3-4 minutes).

      Melt the Cheese: Place a slice of cheddar cheese on top of each egg in the skillet during the last minute of cooking. Cover the pan briefly to melt the cheese for about 1 minute.

        Build the Sliders: On each bagel half, layer the following: the bottom half of the bagel, a slice of avocado, a piece of bacon, a cheesy egg, a handful of baby spinach, and then the top half of the bagel.

          Serve: For an extra kick, drizzle your favorite hot sauce on top before closing the sliders. Serve immediately while warm and enjoy!
